Ponthier vacuum-cooked whole chestnuts celebrate their 40th anniversary and are now enshrined in a new eco-responsible box.
Redesigned in an eco-responsibility approach, the new vacuum-cooked chestnuts box, in paper kraft, provides a 91% global recycling rate and a 37% lighter in weight compared to the previous box.
The concept of waste space avoidance has been applied and the printing has been limited to use the minimum ink.
The packaging production is located in France, which minimizes its carbon footprint.
Recycling instructions have been mentioned explicitly on the box in order to allow everyone to contribute to their recycling.

White Asparagus 100% puree, a delicate and tender flesh

Cultivated between the regions of the Adour river and the Médoc, the white asparagus selected by Maison Ponthier is an exceptional product. An oceanic climate and sandy soil are favourable to its cultivation. This permeable and deep soil is regularly irrigated by the rain, and is perfectly suited to growing asparagus - it allows it to grow upright inside a small mound that protects it from the sun’s rays. This darkness preserves its mother-of-pearl colouring, delicate taste and tender flesh. It is harvested manually with the help of a gouge. Ponthier frozen white asparagus 100% puree (French origin) will delight food lovers.

Quercy Melon has a Protected Geographical Indication, celebrating the exceptional Quercy terroir in the south-west of France. To be awarded the PGI certification, production must meet very strict specifications, in particular clay content in the soil greater than 25% to give the melons a pronounced musky flavour, farmland that is left fallow for 5 years after 1 year of production and also a minimum BRIX level for the fruit. (...) The melons used by Maison Ponthier are harvested by hand, to check the precise level of ripeness of each fruit before being sorted according to category defined by size, weight and calibre. (...) Ponthier chilled and frozen Melon from Quercy (PGI) purees are broadly used in cocktails, iced soups or full fruit sorbets.
Coconut puree, creamy and smooth texture

Maison Ponthier offers a second purée, of coconut, with a particularly creamy and smooth texture. Cultivated at the equator in Indonesia, the coconuts used to produce this purée are only selected if their flesh is perfectly healthy and fresh. With its gourmand flavour, long finish and immaculate glacier-white colour, this coconut purée is a delight for lovers of this fruit. Used in cocktails, pastries, savoury dishes, Ponthier frozen coconut fruit puree (no milk proteins) offers an exotic and smooth touch to all recipes.

This tiny purple, almost black, berry grows primarily on marshlands and comes from an elegant and exclusively South American palm tree. Its preferred region is still the Amazon Basin, the most biodiverse forest in the world. Maison Ponthier turned to this unique and singular ecosystem to select the highest-quality acai berries. Ponthier chilled or frozen acai purees are used primarily for creating “Acai Bowls” and smoothies, a health trend loved by foodies and vegans for its fresh and balanced recipes.

The sudachi is an exotic citrus fruit with green peel and intense and refreshing aromas. Sudachis are very small, with a diameter of just 4cm. This round fruit has particularly pulpy flesh. Linked to the history of Japanese cuisine since the dawn of time, sudachis are primarily produced in Tokushima, where Maison Ponthier has carefully sourced high-end raw ingredients. Used in particular for seasoning fish and ceviche or preparing fresh drinks and sorbets, Ponthier sudachi 100% frozen or chilled fruit purees offer an entirely new thirst-quenching and spicy note.
Lychee 100% puree, with flavours of rose and muscat

The lychees selected by Maison Ponthier are harvested from old trees situated in the region of Toamasina, on the east coast of the island. Toamasina’s land is favourable for lychee crops: an orange, very rich soil and a tropical climate marked by heavy rains during the southern winter and high temperatures during the rest of the year. Following harvest, the fruit is selected according to very strict specifications. Each bunch is then carefully peeled by hand in order to preserve all the qualities of this particularly soft and fragile flesh, with flavours of rose and muscat. Ponthier frozen lychee 100% puree offers many options for creations thanks to large flavours associations (raspberry, coconut, quince).
Frambosa Red Rhubarb 100% puree, sweet and tart

Maison Ponthier has selected the Frambosa variety of rhubarb with red stalks. It is particularly sweet, tart and rich in fibre. Cultivated in black soil in the south of Poland, situated at 300m to 500m of altitude and offering a spring continental climate, this rhubarb is freshly harvested at ripeness. Its leaves are then gently removed and it is cut below the leaves and above the uprooted section so that its petioles are not damaged or brown. Ideal for making pastries and confectioneries, Frambosa red rhubarb 100% (no added sugar) puree is available in the 1kg frozen range.

The Gariguette strawberry from Lot-et-Garonne was selected by Maison Ponthier notably for the intensity of its flavour, its fine sweet/acidic balance and its red gourmand colour. This variety enjoys the department’s typical climate, which is simultaneously basked in oceanic and Mediterranean influences. This variety is one of the department’s gastronomical and economical gems, with an important reputation all over France. Chilled and frozen Gariguette strawberry purees (French origin) are ideal for making desserts, cocktails, ice creams, sorbets and fruit jellies.
