The PGI Menton Lemon is cultivated in a confidential manner by citrus growers passionate about their work. The lemon trees blossom in an enchanting place, on the stepped terraces in the heights of Menton, facing the Mediterranean sea. They truly stamp their mark on the landscape. The Menton Lemon, a fruit of gold and sunshine, develops more sugar content than it would elsewhere in order to withstand the cold. It offers a sweet, floral and fresh flavour, intense aromas and remarkable long-lasting taste. Fabrice Puech's lemons are grown on an old family plantation with century-old and bicentury-old trees, irrigated with spring water from the mountains inland. They ripen on the tree, undergo no treatments and are harvested by hand. These gentle cultivation methods mean that the very fragrant and finely granulated citrus peel can also be consumed. This very exclusive fruit inspired Ponthier's crush recipe, made from whole lemons. In Ponthier's processing workshops in Objat, the lemons are trimmed and deseeded, cold candied to reveal the full power of their aromas, then crushed. The crush can add intensity and substance to pastry creations; it can be used as it is or ground more finely if needed.
